Going Bonkers Over This Coconut Cream Pie
To start, I just have to share this great recipe with you from Cooking Light. It is the most ridiculously delicious Coconut Cream Pie. As I was preparing it, the fabulous Shulie from Food Wanderings tweeted me telling me that this was her very favorite. So this delightful creation was made in her honor while I wafted scents of coconut and vanilla her way over the twitterverse.
Note: The recipe instructs you remove the coconut, but I admit that I added some fresh stuff after I strained the liquid for the custard. It also calls for packaged crust, but I made my own fresh butter crust. So much for the "light".
Doughnuts for Lunch!
Next, although not a recipe, I must share this doughnut place with you. If you EVER find yourself walking around New York City (or come to visit me here) craving a doughnut, you MUST try the Doughnut Plant. It was lunchtime when I walked past their location in Chelsea and thought I would stop in to get something to go. Then I got stuck in between the yummy aromas and personal desire to sit in the world of a hot little sugar-lovin' community.

In keeping with the spirit of “if you don’t have anything nice to say, don’t say anything at all”…I lost. And although there is a fiery little Butter inside, that’s all I am going to say about that.
A New Race and Some "Motivashe!"
Between the intensity of the sugar and the minor bruising of an ego, running always seems to help. So while searching for races I found another fun run like the muddy extravaganza from last year!
Is anyone planning to be in the city in June and looking for a race? How about the Rebel Race? After seeing the line below on their site along with the pics and profiles, it will be hard not to sign up.
“Unleash your inner rebel: ditch the coat and tie and free yourself from the daily grind.”
And @heelstorunners introduced me to The Daily Mile. Perfect! If you need some motivation to stay on track, this should help {thanks Nina!}

When I looked around and realized nobody in there knew me, I felt mischievous…a little naughty {tee hee hee}. Who would know? Next thing I knew, I was sitting in a chair enjoying my lunch that consisted of a huge raised n’ glazed pistachio doughnut and a nice cuppa joe to wash it all down. And for dessert? Yup another please! But this time how about a Valrhona chocolate ring of delight!
I left there all-a-buzz with a skip in my step and sugar on my lips.

You were quite the temptress over the internet with whiffs of vanilla & coconut. This coocnut cream pie looks to die for. Thank you so much for the dedication, truly!! I am not a pie person but the first and pretty much the only we all here are in-LOVE with is this one!! With a recent exception of key lime sometimes added to the repertoire.
