Oh My, Oh My, Boston Cream Pie

What do you bake for such a Birthday? Something delicious... something comforting… and something full of custard, of course!

Let's Bake A Triple-Layer Boston Cream Pie 

Step 1: Prepare the Pastry Cream Recipe (Double it)
Start by making the pastry cream. Just click the link above and scroll down a little and you will find it it in the middle of the page. This is the same recipe that I use for my eclairs. Double this and put it in the refrigerator until you are ready to assemble. Make sure to take it out an hour before you plan to put it together.

Step 2: Make the Butter Cake Recipe 
I found this All-Occasion Downy Yellow Butter Cake recipe in my Cake Bible (excellent book) and it is delicious. I like to multiply the recipe by an extra 3rd because it makes extra thick cake layers. If you choose to do this, make sure to use 9 by 2-inch high cake pans. Cool cakes as directed.

Step 3: Mix the Chocolate Ganache
Place 3 tablespoons of butter in a double boiler with 3 squares (3 oz) of chopped semisweet baker's chocolate. Stir while melting and remove from heat when completely melted. Mix in 2 cups powdered sugar and add a teaspoon of vanilla. Mix well. Add 2 to 4 tablespoons of hot water (one at a time) until you get the consistency you are looking for. Stir until smooth and ready to spread!

Step 4: Assemble
Cut the cakes in half. I only use 3 of the 4 layers...so feel free to use the remaining half to taste test ;) Stir the pastry cream and spread in between the layers. Top with ganache and ta-da!

Step 5: Party, Celebrate Life and Eat Cake!
